I have to say that the Prioress is one of my favorite characters. She is one of my favorites because she has so many hidden flaws, but then again are not very hidden. She seems to have nice manners, but is very gluttonous and shows that she is. She speaks French, but does so as a Londoner would. The Prioress loves animals, but holds her dogs on a higher level than she does to most people, spoiling them in anyway possible. She also sings, but she sings through her nose, so she's not a good singer. She dresses much too nicely for everyday nothings.
I believe that of Chaucer's characters in The Canterbury Tales, the Knight has endured the most. The knight is a legendary character that represents a hero or a similar figure in so many stories to this day. This character is honorable, polite and modest, which are good attributes for a hero, but he is also armored and bloody, having been in any battle anywhere, which is a bit over the top all the same. Not only is the knight a hero in stories, but we have knights in the real world, including police officers, firefighters, and the military fighting to make this world better.
